Asparagus tortelli with shrimps

  • 500 gr asparagus tortelli
  • n.8 shrimps
  • n.1 onion
  • n.1 tomato
  • Diced Parsley pesto (to taste)
  • Salt & pepper
Black sepia pasta
Filling: green asparagus, cooked ham, Parmesan cheese, eggs, breadcrumbs, butter, origan, salt and pepper.

  1. Fry onion in EVO oil
  2. Once golden add tomato and shrimps
  3. Season to taste with salt and pepper, then add cooked tortelli
  4. Decorate the plate with some drops of parsley pesto and some julienne of yellow and red bell peppers.
