Ricotta and speck caramelle with saffron and blackcurrant cream

  • 500 gr ricotta caramelle
  • 20 gr butter
  • 200 ml fresh cream
  • n.1 punnet of blackcurrants
  • Saffron (to taste)

Filling: ricotta, speck, Parmesan cheese, breadcrumbs, butter, onion, parsley, fresh cream, salt, pepper and nutmeg.

  1. Bring cream and ground saffron to boil
  2. Lower heat and cook for another few minutes
  3. Add butter and cooked caramelle
  4. Decorate plate with blackcurrants and with some Parmesan cheese (optional)
